Citrus and Herb Oven Roasted Chicken

Citrus and Herb Oven roasted chicken is great go-to recipe for infusing sweet and tangy flavors into chicken, it is guaranteed to knock your socks off!

The best chicken part to use for this recipe is thigh. The thigh, I find to be very succulent and juicy unlike the breast which I find a tad too dry for roasting recipes.

Ingredients:

6 Chicken thighs

2 Tablespoons Olive Oil

3 Tablespoons Honey or 1 Tablespoon Sugar

1 Freshly Squeezed Orange

1 Freshly Lemon

1/2 Teaspoon Garlic Powder

1/4 Teaspoon Onion Salt or 1/2 TeaSpoon Onion Powder

1 Tablespoon Thyme

3 Knorr Chicken Cubes

1/4 Teaspoon Cayenne Pepper

1 Teaspoon Paprika Powder

2 Tablespoon Rosemary

1 Teaspoon Chinese Five Spice

Onion, Lemon and Orange slices for garnishing

Method:

Combine all the dry ingredients, then rub 3/4 of the spice mix all over the Chicken Thighs, making sure you reach underneath the skin as well. You can also make cuts on the Chicken to allow the seasoning penetrate deep into the chicken. When you’re done, cover with clingfilm, then leave to marinate in your fridge for at least 6 hours, overnight preferably.

I did not marinate mine for long cos it was an impromptu recipe and time wasn’t on my side.

Preheat your oven to 180 degrees. Now, take out the Chicken. Combine the wet ingredients, then spread all over the Chicken, then begin to massage the wet mix into the chicken, ensure the chicken is well coated with the mix. Arrange the Orange, Lemon and Onion slices on the chicken, You may place some underneath the chicken pieces as well.

Place the chicken into the preheated oven, then grill or roast for 45 minutes to 1 hour. Depending on the type of pan you’re using, you may wish to turn the chicken over at some point during the grilling process. I didn’t need to as I used a really good Cast Iron pan.

Halfway into the grilling, rub some of the juice in the pan all over the chicken to prevent dryness.
